this is my all time favorite summer bbq side.  It also keeps well in the fridge for a few days.  The secret to this is the vinegar:)

Ingredients

  • 1 box of elbow macaroni, cooked, rinsed in cold water and drained
  • 1/3 cup diced celery
  • 1/4 cup minced onion
  • 1/2 cup cherry tomatoes
  • 1/2 cup chopped cucumbers
  • 4 hard boiled eggs, chopped
  • 1 cup prepared mayonnaise
  • 1 tablespoon of yellow mustard
  • 1 1/2 teaspoons sugar
  • 1 1/2 tablespoons cider vinegar
  • salt & pepper

Instructions

  1. Toss in large bowl, serve chilled

How to make macaroni salad?

Here is a simple and delicious recipe for summer macaroni salad:

Ingredients:

  • 1 cup of elbow macaroni
  • 1 cup of cherry tomatoes, halved
  • 1/2 cup of diced red onion
  • 1/2 cup of diced cucumber
  • 1/2 cup of sliced black olives
  • 1/2 cup of diced red bell pepper
  • 1/2 cup of diced green bell pepper
  • 1/2 cup of mayonnaise
  • 2 tablespoons of apple cider vinegar
  • 1 tablespoon of Dijon mustard
  • 1 teaspoon of sugar
  • Salt and pepper to taste

Instructions:

  1. Cook the macaroni according to the package instructions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked macaroni, cherry tomatoes, red onion, cucumber, black olives, red bell pepper, and green bell pepper.
  3. In a small bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, sugar, salt, and pepper.
  4. Pour the dressing over the macaroni mixture and stir until everything is well coated.
  5. Cover the bowl and refrigerate the macaroni salad for at least 30 minutes to allow the flavors to meld.
  6. Serve chilled and enjoy!

Can you freeze macaroni salad?

Yes, you can freeze macaroni salad. However, it is important to note that mayonnaise and other dairy products do not freeze well and can cause the salad to become watery and separation upon thawing.
