Ingredients

  • 1 lb. boneless chicken breast
  • 1 lb. boneless chicken thighs
  • Olive oil
  • Kosher salt and freshly ground black pepper
  • 16 7-inch corn tortillas
  • Shredded cabbage
  • Chopped white onion, for serving
  • Shredded Jack cheese, for serving
  • 2 limes, cut in wedges for serving
  • Cilantro, chopped for serving
  • Mojo Marinade:
  • 4 garlic cloves, minced
  • 1 jalapeno, minced
  • 1 large handful fresh cilantro leaves, finely chopped
  • Kosher salt and freshly ground black pepper
  • 2 limes, juiced
  • 1 orange, juiced
  • 2 tablespoons white vinegar
  • 1/2 cup olive oil
  • For the Cilantro Cream
  • 8 oz. sour cream
  • 1/2 cup tomatillo salsa or salsa verde
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon celery salt
  • 1/2 teaspoon ground cumin
  • 2 teaspoons garlic powder
  • 1 bunch fresh cilantro, chopped
  • 1 tablespoon fresh lime juice

Instructions

  1. For the Mojo marinade: blend all ingredients in a food processor. Lay the chicken in a large baking dish and pour the mojo marinade over it. Wrap tightly in plastic wrap and refrigerate for 1-2 hours
  2. For the Cilantro Cream: blend all ingredients in a food processor and set aside in fridge.
  3. Preheat an outdoor grill or a ridged grill pan over medium-high flame. Brush the grates with a little oil to prevent the meat from sticking. Pull the chicken out of the mojo marinade and season the on both sides with salt and pepper. Grill (or broil) the chicken for 10 minutes per side, turning once, until well done. Shred or chop chicken in to small pieces
  4. Warm the tortillas for 30 seconds on each side in a dry skillet or on the grill, until soft.
  5. Top with shredded chicken, shredded cabbage, chopped onion, chopped cilantro, shredded cheese and cilantro cream. Squeeze some fresh lime juice on top!
